A few weeks back, our friends at the Hard Rock invited us out to a super awesome event they throw each month at one of their amazing restaurants. Unfortunately, we were out of town and couldn’t make it ourselves. Not to worry, our girl, Caitlyn of Live.Sweat.Sleep.Repeat. had us covered! She went in our place and was cool enough to write a review of all the fun she had! Check it out:

Once a month, Council Oak Steaks & Seafood pairs their dishes with the best of beverages for one evening; giving guests a chance to try a new spirit, beer or wine, along with the delicious dishes of Chef Dave Puatu.

This particular Thursday evening, the Wild Wild West met Florida as High West Distillery joined the alluring tastes of Council Oak at Seminole Hard Rock Hotel & Casino for four courses with beverage pairings. Take note of the beverage names, each drink was named after slopes in Utah, where High West Distillery resides.

 
We began our evening with the Payday, made with High West Silver whiskey, simple syrup & lime juice. At first taste, it resembles a margarita with more bite. This accompanied our appetizers of Smoked Salmon cones with Osetra Caviar, delicious Rabbit Confit with a honey glaze and Mini Pastrami Burgers. 
 
At this point, the serenading begins with the voice of Josh Carroll…and the courses begin.

First Course: Roasted Guinea Hen with a pea puree & pickled gooseberry. If you have never tried gooseberries…do! They were the perfect compliment to the hen and really made the dish complete. We switched from whiskey to bourbon with the Lost Prospector. Stunning red in color thanks to blackberries, this drink was made with High West American Prairie Bourbon, St. Germaine, house-made lemon juice, simple syrup and garnished with mint.

Second Course: We do not like to play favorites, but this dish was our favorite of the evening, Smoked Rainbow Trout. It was almost too pretty to eat as it was garnished with Scallop Froth, a Bagel Crisp & Salmon Caviar. But the Rainbow Trout was so fresh and made to perfection, along side the purple asparagus salad…our plates were clean. The perfection continued as our next beverage arrived, Fools Gold. Made as a twist on the French 75, it was a combination of High West’s Campfire, champagne and fresh orange & lemon juice.

Third Course: In true fashion of Council Oak Steaks & Seafood, our last dish was Grilled Wagyu Hanger Steak with mushroom, carrot puree, salsa verde and a delicious honey-chipotle glaze. Another favorite of ours, Council Oak is known for their steaks and this definitely did not disappoint.

Although the mixed beverages were superb and made with such detail, we were wondering how High West tasted solo. Lucky for us, next up was their Yippee Ki-Yay. This is High West’s Limited Release Double Rye. Solely made just for sipping, it accompanied the steak quite well with its robust flavor.

Fourth & Final Course: We had the privilege to taste the creativeness of award winning Chef Stefan Schubert with his deconstructed PB&J truffle, which was amazing. And while we were curious how High West was going to be paired for the sweetest dish of the night…and we were pleasantly surprised with the Widow Maker; this drink was a combination of High West’s double rye, chocolate liquor and topped off with a caramel & sea salt rim.
